Happy Christmas Eve!!

Happy Christmas Eve to all!!! What does this day bring for you and yours?? today I am baking the mini red velvet cheesecakes for our Christmas Dinner. I bought a mini cheesecake pan on Amazon.com. I am excited to see how my little beauties turn out. Instead of using the regular cream cheese, I will be using 1/3 less fat cream cheese. I am also making my topping out of mascarpone cheese instead of whipping cream. I love mascarpone! and since this is a special occasion, I am pulling out all the stops. Each cheesecake is individually sized, so that really helps with portion control.  Here is the recipe I am using. This would be great for Valentines day as well.

thin chocolate wafer cookies (from 9-oz package), crushed (1 1/4 cups)
tablespoons butter, melted
packages (8 oz each) plus 4 oz cream cheese, softened
cup granulated sugar
cup unsweetened baking cocoa
teaspoons vanilla
tablespoons red food color
cup whipping cream
tablespoon granulated or powdered sugar
Chocolate curls, if desired
  1. Heat oven to 350°F. Place foil baking cup in each of 16 regular-size muffin cups. In small bowl, mix cookie crumbs and melted butter. Divide crumb mixture among cups. With back of spoon, firmly press cookie crumbs in bottom of each foil cup.
  2. In large bowl, beat cream cheese with electric mixer on medium speed until smooth. Gradually beat in 1 cup granulated sugar and the cocoa until fluffy. Beat in vanilla and food color. Beat in eggs, one at a time, until well blended. Divide batter evenly among baking cups (cups will be almost full).
  3. Bake 20 to 25 minutes or until centers are firm. Cool 15 minutes (cheesecake centers will sink while cooling). Refrigerate in baking cups at least 1 hour; cover and refrigerate at least 1 hour longer before serving.
  4. In chilled small bowl, beat whipping cream and sugar with electric mixer on high speed until stiff. Spoon whipped cream on chilled cheesecakes. Just before serving, garnish with chocolate curls. Cover and refrigerate any remaining cheesecakes.

Making Chocolate Curls
Place a bar or block of chocolate on waxed paper. Make curls by pressing firmly against the chocolate and pulling a vegetable peeler toward you in long, thin strokes. Small curls can be made by using the side of the chocolate bar. Transfer each curl carefully with a toothpick to a waxed paper-lined cookie sheet or directly onto cheesecake. Don’t have time to make chocolate curls? Sprinkle whipped cream with baking cocoa.

    I also wanted to share my tree topper this year. Everyone in my family loves watching Supernatural, and so my daughter and I decided that this year, Castiel would sit atop our Christmas tree!

    LOL!! every time I look up at the tree I giggle and smile. I am sure there are lots of other Supernatural fans out there with Misha Collins at the tops of their tree. 😉 (and I am sure Misha finds this amusing)

    If it was cold enough outside here where we live, it looks as if it could snow. This of course will not happen, as it is much warmer than usual for this time of year! We actually have THUNDERSTORMS headed here! SAY WHAT!???? Isn’t that just a summer thing?? WEIRD!

    It is time to eat some breakfast for me, then on to whipping up my little red cheesecakes!
