SPRING HAS SPRUNG!!! YAY!

WELCOME SPRING 2013!!!!

 I am so happy that spring has finally sprung!! It is so exciting! My husband and I actually have yard work to take care of for the first time in months, and the trees are just starting to bloom. My mom sent me a photo today that made my tummy do a little flip!! I just love it when all the little pink blooms burst forth!

 I have been hard at work creating my contour waist pant pattern drafts, and I will purchase the fabric for them today with Ciarra. I can’t wait to see what fabric she chooses this time. Ciarra is turning out to be the perfect “in house” model for all of my designs. 🙂

I also wanted to share a delicious recipe I recently came across and made. I think it is the perfect “emergency” treat to make when I am craving sweets. I like to indulge every now and then, but I mostly avoid it. Lately I have been having some wicked chocolate cravings, but I don’t want to eat a bunch of calories…so…. this “chocolate chocolate chip protein cookie” recipe comes to the rescue! They smell exactly like brownies when cooking (and they pretty much taste like them too!)

My Chocolate Chocolate chip protein cookies! YUMMY!

CHOCOLATE CHOCOLATE CHIP PROTEIN COOKIES
1 egg
1/2 cup vanilla protein powder (I use MRM 100% all natural whey)
1/4 cup old fashioned oats
1/4 cup of almond meal/flour
1/4 cup coconut flour
2 tablespoons Hershey’s special dark cocoa powder
1/4 cup truvia sweetener
1/2 teaspoon baking soda
1/4 milk (I used coconut but any will do)
1/4 cup to 1/2 cup 60% or higher chocolate chips (the more you add the more calories they become. You can even find sugar free ones!)
Preheat oven to 340 degrees.
Mix together all ingredients, except chocolate chips, until dough forms, then add chocolate chips.
Using a tablespoon cookie scoop, drop mixture into 12 cookies on a parchment lined cookie sheet.
Bake for 15 to 20 minutes (watch towards end of cooking because ovens vary)
remove from oven and cool on rack.
ENJOY!!! I know I did!!!
My cookies ended up at around 60 calories a piece. Depending on your ingredients this calorie count may vary.
The quote above is very true. Lately I have forced myself to slow down a bit, and have been much more forgiving if I don’t get everything done on my daily list. Today I took a bit of a breather, and watched a movie with my kids. Here is what we watched:

SUCH A CUTE MOVIE!!!

 Aquamarine has got to be one of the cutest and sweetest movies ever. I love the message of love and friendship it conveys. It always warms my heart and makes me smile.
