Salad Bar Night!! A great idea for picky eaters.

Today Soren and I were discussing some questions from one of his vocabulary work books. The word we were discussing was “portion”in which the question was posed, “what do you like large portions of and what do you only like small portions of?”
Soren’s answers were “Your apple pie” for large portion and “salad” for small portion! I thought this was odd, because I know how much Soren loves veggies!! So why not salad? He seems to eat most of it when ever we make it, but I had no idea he was not enjoying it. I then asked him why he didn’t like the salad we eat, and to this he responded, “I hate all the stuff Ciarra puts in it! I don’t like artichoke hearts or raw tomatoes.”
This gave me an idea…we will have a “salad bar night!” while this idea is not necessarily new, I think it is a wonderful idea when you have finicky eaters in your house. Since we have been having Sunday dinner with the grandparents almost every weekend lately, I thought this would be an amazing thing to do for our family dinner nights! This way everyone gets what they want. Perfect!! We will have huge bowls of lettuce bases like kale, spinach, romaine and boston lettuce, and then lots of smaller bowls of the following things. This is just my list of some of the things we like, but the sky is the limit!! feel free to use this idea, and add or take away what ever you please.

My Salad bar night list:


Kale
Spinach
Romaine
Boston lettuce

Cucumbers
Cherry tomatoes
Avocados
Shredded carrot
Shredded beets
Garlic olives
Kalamata olives
Capers
Pepperoncinis
Roast diced potatoes (roasted until nice and crisp)
Mushrooms roasted 
Broccoli
Cauliflower 
Garbanzo beans
Sunflower seeds
Sliced almonds
Walnuts
Feta cheese
Shredded cheese
Cottage cheese
Boiled eggs
Quinoa
Peas
Edemame
Sardines (this is for Soren! He loves them!)
Roast or grilled diced chicken
Red onion
Green onion
Fruit salad (ambrosia salad!)
Artichoke hearts (for everyone else! Soren hates them)
For salad dressings:
Goddess dressing (the Annie's kind. Soren loves it!)
Homemade Balsamic vinaigrette 


I am really looking forward to our salad bar night. I am thinking about making some muffins to have along with the salad. I am not sure which kind I want to make yet though...probably something with citrus involved...nice a lemony? That or a more hearty bran type...I will have to take a vote and see what people like best.

I think my little man is going to love having salad now after this! especially if Grandma adds her fresh grown veggies into the mix!! Yummy!!!
